How to have the slider image cut off at the top instead of going to the menu

1) I am trying to have my slider image stop at the line where the header menu is, instead of going over it.

2) How can I add text over the slider image?

3) Based on the templates, I was able to see the logo beside the name. For my case, I was not able to choose any logo for it.
Where can I choose it?
